NUMBER 4: COURGETTE FRITTATA

Last year I was asked to do cookery demos at some summer shows and I chose to show off my recipe for individual courgette frittatas. They're really good as bite-sized treats, but the recipe can also be adapted to make one large frittata (pictured above). I've made it like this several times over the past 12 months - a slice of it makes a fab lunch with salad and crusty bread, and it's great cold for a packed lunch to take to work too. Highly recommended (and the recipe must have gone down went down well at the demos because I've been asked to do more this year - watch this space!)
